Firehouse Chili :
International Firefighter day
- 2 T Oil
- 4 lb ground meat
- 4 Cans kidney beans - drained/rinsed
- 3 Can diced stewed tomatoes ( you can use 1 Can of Rotel if you like heat)
- 2 onions chopped
- 1 bell pepper chopped
- 2 ribs of Celery Chopped
- 1 Can beef broth
- 3 T Chili powder
- 2 T ground coriander
- 2 T cumin
- 1 Tsp oregano
- 3 cloves of minced garlic
In a Dutch oven, heat canola oil over medium heat. Brown beef in batches, crumbling meat, until no longer pink; drain and set aside. Add onions. celery and green pepper; cook until tender. Return meat to Dutch oven. Stir in remaining ingredients. Bring to a boil. Reduce heat; simmer, covered, until flavors are blended, about 1-1/2 hours.
