Mexican Shortbread Cookie: Recipe

 

Mexican Shortbread Cookie: Hojarascas





  • 1 C soft Butter
  • 1 C powdered Sugar
  • 1 Egg
  • 2 Tsp vanilla extract
  • 2 Tsp ground Cinnamon
  • 1/2 Tsp Salt
  • 2 1/2 C  AP Flour 
In a large bowl - Beat the Butter until fluffy. Add the rest of the ingredients and Mix well until the dough comes together. Place dough on flour surface and roll out carefully with a rolling pin. Cut out shapes and place on parchment lined baking sheets. Let Chill. 

While cookies Chill- Pre Heat oven to 350 degrees.  Bake the cookies for 10 minutes-  then flatten and sprinkle with Cinnamon sugar.   Bake another  5- 10 minutes until golden brown . Let Cool. 




Sprinkle with the colors of the Mexican flag; Red, Green and white
