Tuscan Bean Crockpot Soup

 

Tuscan  Crockpot Soup 





  • 1 lb Italian sausage 
    •  2 medium onions, chopped small
    • 2 ribs celery ,chopped 
    • 2 , Carrot chopped 
    • 2  Tablespoon Olive Oil 
    •  2 T minced garlic 
    •  2 tsp. Italian Herb Seasoning 
    • 1/2 tsp red and black pepper 
    •  2 : 15 oz. cans Northern beans ,drain
    •  1 :   tomatoe paste
    •  2 C chopped spinach
    •  4 cups chicken broth
    •  1/2 C  cream 


  • Heat the oil in a large heavy frying pan;and cook sausage. Add the onions, celery and garlic and cook 4-5 minutes or until soft.
  • Add to slow cooker with paste, seasoning,  carrots, beans and stock.
  • Cook 4 hours on high or 8-10 hours on low.
  • Finish with cream. And spinach. Cook until spinach wilt.
