s (potato pancakes) are eaten during Hanukkah to commemorate the miracle of the oil in the Second Temple, symbolizing the eight days the oil miraculously lasted, which is why fried foods cooked in oil are central to the celebration, reminding Jews of perseverance and Jewish heritage. While potatoes weren't originally used, they became popular because they were affordable, accessible, and fried well, replacing earlier cheese pancakes.
