My Mom Spinach salad
A family favorite and perfect for National Spinach day. This recipe is perfect for any time of the year. And this is great when made with homegrown spinach from the garden.
ngredients
- 5 oz.
fresh spinach
- 1
apple, such as Honeycrisp, thinly sliced
- 1/3 c.
crumbled feta
- 1/4
red onion, thinly sliced
- 1/4 c.
sliced almonds, toasted
FOR DRESSING
- 1/3 c.
olive oil
- 3 tbsp.
red wine vinegar
- 1
clove garlic or 1/2 shallot, minced
- 2 tsp.
dijon mustard
Kosher salt
Freshly ground black pepper
In a medium bowl, whisk together all dressing ingredients until completely incorporated. Season with salt and pepper.. Combine all salad ingredients in a large bowl. Add dressing, toss to combine, and serve immediately.
