Today is National Blueberry Popover Day :
2 eggs
1 cup milk
1 cup flour
1/3 cup sugar
1/2 teaspoon salt
1/2 cup blueberries (fresh or thawed frozen)
Preheat oven to 425 and lower the rack to the 2nd lowest spot. Grease and flour a popover pan or oversized muffin pan. In a small bowl lightly beat the eggs.Gently stir in milk and set aside. In a separate bowl combine the sugar, flour and salt. Stir the blueberries into the dry ingredients.. Combine the wet and dry. DO NOT OVERMIX. There can be some dry clumps. Mix very gently and only mixed. Fill popover cups about 1/3 full and bake for 20 minutes.
