Southern Praline Cake

 Welcome to Saturday Baking : 

I am sharing this Saturday another of Mom's favorite Cake recipes from her recipe box. Just like the famous candy this topping is sweet and  filled with love    From my Home to Yours - Enjoy ! 



Mom's Praline Cake : 

  • 1 1/2 C flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp Salt
  • 1/4 C shortening
  • 1/2 C Sugar
  • 1 tsp vanilla
  • 1 Egg
  • 2/3 C Milk
Mix dry and then add wet ingratiates. Mix well and place in a greased cake pan. Bake at 325 degrees for about 40 minutes- let Cool. 

Icing : 

  • 1/2 C Brown Sugar
  • 6 tsp Flour
  • 2 T Water
  • 6 T Butter
  • 1/2 C Chopped Pecans 
Mix ingredients together and pour over Cake. Return to oven (325) and Bake -10 minutes.

Home Baking : Lemon Meringue Pie

 

Welcome to my Home this Saturday ! 

 My Grandmother was famous for her pie's in town. Today I am sharing her Lemon Marroquin Pie recipe :  Give this recipe a try and tell me How you like it !!!  Lisa 


Grandma’s Lemon Meringue Pie




  • 3 tablespoons cornstarch
  • ¼ teaspoon salt
  • 1 ½ cups water
  • 2 lemons, juiced and zested 
  • 2 tablespoons butter
  • 4 egg yolks, beaten 
  • 1 (9 inch) pie crust, baked
  • 4 egg whites
  • 6 tablespoons white sugar
  • Preheat oven to 350 degrees F (175 degrees C).
  • To Make Lemon Filling: In a medium saucepan, whisk together 1 cup sugar, flour, cornstarch, and salt. Stir in water, lemon juice and lemon zest. Cook over medium-high heat, stirring frequently, until mixture comes to a boil. Stir in butter. Place egg yolks in a small bowl and gradually whisk in 1/2 cup of hot sugar mixture. Whisk egg yolk mixture back into remaining sugar mixture. Bring to a boil and continue to cook while stirring constantly until thick. Remove from heat. Pour filling into baked pastry shell.
  • To Make Meringue: In a large glass or metal bowl, whip egg whites until foamy. Add sugar gradually, and continue to whip until stiff peaks form. Spread meringue over pie, sealing the edges at the crust
  • Bake in preheated oven for 10 minutes, or until meringue is golden brown.

Recipe time : Apple Cake

 

Easy Apple Cake : 

I got a case of apples from the food bank. I am spending my time inside making apple cake , jelly and butter.  





  • 1 3/4 C Sugar
  • 1 C  oil
  • 3 large Eggs
  • 1 tsp Vanilla
  • 2 C flour
  • 1 1/4 tsp baking powder
  • 1 tsp salt
  • 1 tsp cinnamon 
  • 1/4 tsp baking soda
  • 2 C chopped Apples 
  • 1 C walnuts (optional/ Chopped) 
  • 1 1/4 C whipped topping 

  1. Preheat oven to 350°. In a large bowl, beat the sugar, oil, eggs and vanilla until well blended. Combine the flour, baking powder, salt, cinnamon and baking soda; gradually beat into sugar mixture until blended. Fold in apples and walnuts.
  2. Transfer to a greased 13x9-in. baking dish. Bake until a toothpick inserted in the center comes out clean, 35-45 minutes. Cool on a wire rack. Serve with whipped topping.

Applesauce and Cranberry Bread

 

It's time for some  baking ! And it's quick bread  with applesauce and cranberries..... 


Applesauce and Cranberry Bread 



  • 8 Tab Butter softened
  • 2 eggs
  • 1 1/4 C applesauce
  • 2 C flour
  • 1 C Sugar
  • 1/4  C light brown sugar
  • 1/2  C Cranberries
  • 1 Tsp Vanilla
  • 1 tsp  baking soda
  • 1 tsp  baking powder
  • 1/2 tsp salt 
  • Optional; you can had  1/2 c  of  chopped Nuts if you like 

Preheat oven 325 degrees 

Mix bread dough and pour into greased loaf pan. Bake for 65 to 70 minutes. Let Cool before removing from pan.  

Make these in individual Christmas bread pans and these make great gifts.

Birthday Cake in a Mug

 

Need a quick birthday cake or a party treat? Try my Birthday Cake in a Coffee mug!! 





  • 3 Tbsp AP flour
  • 1 1/2 Tbsp Sugar
  • 2 tsp rainbow sprinkles
  • 1/4 tsp baking powder
  • pinch of salt
  • 2 Tbsp Milk
  • 2 tsp Vegetable oil
  • 1/2 tsp vanilla extract 

  1. In a microwave-safe mug, combine the flour, sugar, sprinkles, baking powder, and salt. Then add in the milk, oil, and vanilla, and mix until just combined. Be careful not to over-mix.
  2. Microwave on high (800 - 900 W) for 2 minutes*, or until a toothpick inserted into the centre comes out clean. The cooking time may vary depending on your microwave and settings. If the cake isn't cooked through yet, simply place it back in the microwave at intervals of 15 seconds until done. The mug might be quite hot, so take care when removing it from the microwave.
  3. Top with vegan whipped cream and sprinkles if desired, and enjoy!

  • * If preferred, bake it in the oven at 350°F (180°C) for 15 - 25 minutes, or until a toothpick inserted into the centre comes out clean. Just be sure to use an oven-safe baking dish.

    Apple Bread

     It;s Apple Bread time ! 






  • ½ cup brown sugar
  • 1 ½ teaspoons ground cinnamon
  • 2 large eggs room temperature
  • ½ cup granulated sugar
  • ½ cup  Butter melted
  • 1 teaspoon vanilla extract
  • 1 ½ cups all purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 2 cups chopped apples Pink Lady, Gala, Honeycrisp – any apples that are good for baking, peeled and chopped, about 2 apples
  • Preheat oven to 350°F. Grease and flour an  loaf pan or line with parchment paper. Set aside.
  • In a small bowl, whisk together brown sugar and cinnamon and set aside.
    ½ cup brown sugar,1 ½ teaspoons ground cinnamon
  • Whisk eggs and granulated sugar together in a large mixing bowl.
    2 large eggs
  • Whisk in melted butter and vanilla extract until thoroughly combined.
    ½ cup granulated sugar
  • Stir in all purpose flour, baking powder, baking soda and salt just until combined. The batter will be very thick. Fold in chopped apples.
    • Add half of the batter to the prepared loaf pan. Sprinkle about three quarters of the brown sugar mixture on top of the batter.
    • Spread the remaining batter carefully on top of the brown sugar mixture. Sprinkle remaining brown sugar mixture on top and use a knife or spoon to gently swirl it into the top layer.
    • Bake for 35 to 45 minutes or until lightly golden on top and an inserted toothpick comes out clean or with just a few moist crumbs. (If bread is browning too quickly, tent with foil for the last 10 to 15 minutes.)
    • Let bread cool completely before slicing and serving.

    Summer Sugar Cookie

     


     National Sugar Cookie Day was yesterday...


    I made these for Summer Reading program at the library - but they are even perfect not iced or decorated.  




    Sugar Cookie Recipe: 


    • 2 1/2 C AP flour
    • 2 tsp baking powder
    • 3/4 tsp salt
    • 2 sticks of unsalted Butter
    • 1 1/4 C  Sugar plus more for sugaring
    • 1 large Egg plus Egg Yolk
    • 1 tsp vanilla extract
    Pre Heat Oven to  350 degrees and line baking sheet with parchment paper. 
    Mix dry ingredients together.  Then in a stand mixer  Cream Butter and Sugar  about 2 minutes and add Eggs  and vanilla until fluffy.  And in gradually the dry ingredients With a  spoon make balls of dough and dip in Sugar and place on lined baking pan. Flatten with bottom of a glass and Bake  for 10 - 12 minutes.  Let Cool. .

    Strawberry Cake :National Strawberry day

     

    Strawberry Cake ! It's strawberry time in Louisiana : perfect for Easter...



    This cake is straight from the Strawberry Festival in Ponchatoula, la. : 

    Known as “America's Antique City” and the “Strawberry Capital of the World,” Ponchatoula offers the opportunity to browse antique shops and find unique handmade items and art pieces. The city is known for its wholesome atmosphere and activities that are perfect for the whole family


    • 15.25 ounce box white cake mix 
    • 3 -ounce box strawberry jello 
    • 1 cup strawberries fresh or frozen mashed or finely chopped (measured after you chop or mash them)
    • ¾ cup vegetable oil
    • ½ cup whole milk or 2% milk
    • 4 large eggs at room temperature

    Strawberry Cream Cheese Frosting

    • 8 -ounces cream cheese at room temperature
    • ½ cup  Butter  room temperature
    • 5 to 6 cups  confections sugar sifted then measured, more if needed
    • 2 tablespoons heavy whipping cream more if needed
    • ¼ cup strawberries fresh or frozen, mashed or chopped fine, drained

    For the Cake

    • Preheat oven to 350°F. Lightly spray pan(s) with non-stick spray .
    • Add cake mix, eggs, milk, and vegetable oil to a mixing bowl. Use a  mixer and mix well. Mix in the 1 cup of mashed strawberries and the (dry) strawberry gelatin.
    • Mix 3 minutes, stopping to scrape the sides of the bowl  a couple of times.
    • Divide the batter evenly among layer pans or pour into a 9x 13 pan  Cool the cake layers for 10 minutes in the pan before removing them to a wore rack.  Wait until the cake is completely cool before frosting.
    Icing : Beat cream cheese and butter till smooth. Gradually add in sugar and Mix. Then add cream and fold in strawberries. Use between layers and for icing the cake.

    National Cherry Day

     Easy Cherry Pie




    • 2 Pre pared Pie Crust
    • 2 cans Cherry pie filling
    • 1 teaspoon almond extract
    • Milk
    • Sugar
    • Preheat oven to 425.
    • Place one pie crust in a deep dish pie plate. Allow your little helper to use her fingers to press it into the bottom, sides, and especially the corners of the plate
    • Open the cans of pie filling and scrape it into the pie plate. Add the almond extract and mix it with the cherries and juice. Smooth it all out with a spatula.
    • Carefully lay the second pie crust on top of the pie filling, and press the edges together.Make slits in pie top
    • Brush the top crust with milk and sprinkle with sugar. This is just to make it pretty and not at all necessary.
    • Bake until the crust is golden brown, about 40-45 minutes. After the first 15 minutes, cover the outer edge of the pie with aluminum foil or a pie shield to make sure it doesn’t get too brown

    Apple Bread

     Apple Bread to share !






  • ½ cup brown sugar
  • 1 ½ teaspoons ground cinnamon
  • 2 large eggs room temperature
  • ½ cup granulated sugar
  • ½ cup  Butter melted
  • 1 teaspoon vanilla extract
  • 1 ½ cups all purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 2 cups chopped apples Pink Lady, Gala, Honeycrisp – any apples that are good for baking, peeled and chopped, about 2 apples 


  • Preheat oven to 350°F. Grease and flour an  loaf pan or line with parchment paper. Set aside.

    ZUCCHINI MUFFINS

    January is all about eating healthy habits in the new year! 

    Try these easy Zucchini muffins for breakfast or snacks

     




    • 1 cup granulated sugar
    • ½ cup vegetable oil
    • 2 large eggs
    • 1 cup coarsely grated zucchini
    • 2 teaspoons vanilla extract
    • 1 teaspoon baking soda
    • ½ teaspoon baking powder
    • ¾ teaspoon salt
    • 1 ½ cups all-purpose flour
    • 1 teaspoon cinnamon
    • Preheat oven to 375° F. Line 12 muffin cups with paper liners. Set aside.
    • In a large bowl, stir together sugar, oil and eggs. Add zucchini and vanilla extract; stir to combine. Sprinkle baking soda, baking powder and salt over top. Stir until well blended.
    • Stir in flour and cinnamon; be careful not to over-mix. Fold in chopped nuts or chocolate chips.( optional) 
    • Divide batter evenly among prepared muffin cups. Sprinkle coarse sugar on top. Bake for about 20 minutes, or until a toothpick inserted in a muffin comes out clean

    M and M Cookie recipe

    It's everybody's favorite cookie! 

    Even the Cookie Monster would agree.   




    • ½ cup butter
    • ½ cup granulated sugar
    • ¼ cup brown sugar packed
    • 1 tablespoon vanilla extract
    • 1 large egg
    • 1 ¾ cups all-purpose flour properly measured
    • ½ teaspoon baking soda
    • ½ teaspoon kosher salt
    • 1 ½ cups M&Ms
    • ½ cup chocolate chips optional
    • Preheat the oven to 350 F.
    • Melt butter and add to mixer with Sugar. Gradually add the rest of ingredients  .And lastly add M&M and chips. Scope out dough into cookie sheet and Bake 7 to 10 minutes untl done.

    Apple Cinnamon Muffins

    Apple Cinnamon Muffins






  • 1/2 cup packed (light) brown sugar
    • 1 large egg
    • 1/2 teaspoon vanilla extract
    • 1 large firm apple, such as Granny Smith or Honeycrisp, peeled and cut into large chunks
    • 1 cup all-purpose flour
    • 1 cup all-purpose flour
    • 3/4 teaspoon baking powder
    • 3/4 teaspoon ground cinnamon
    • 1/4 teaspoon kosher salt
    • 1/4 teaspoon ground cardamom (optional)
    • 6 tablespoons unsalted butter, melted and cooled
    • Baking cups or nonstick spray
    1. Heat the oven to 350˚F.
    2. Whisk the sugar, egg, and vanilla in a bowl until smooth. Grate the apple (or dice with a knife) and stir into the sugar mixture. Add in the flour, baking powder, cinnamon, salt, and cardamom (if using), and stir until almost fully combined. Lastly, stir in the cooled melted butter until fully combined.
    3. Place the baking cups in a muffin tin or coat with nonstick spray. Divide the batter into the tin for 6 (or so) muffins. Bake in the middle rack of the oven until a toothpick or cake tester inserted into the middle of a muffin comes out clean or with just a few crumbs, 20 to 22 minutes. Let cool slightly before serving. To store, let cool completely and keep in an airtight container at room temperature for a few days.
