Oatmeal Rasin Cookies

It's recipe time 

Straight from my Mom's recipe box these cookies are a favorite of my son. I make a big batch and ship them to him in college for him and his dorm mates to enjoy some cookies from Home.   Make sure you read the Cookie packaging tips at the end of the post to keep your care package  safe.   Lisa 



Coconut Oatmeal Raisin Cookies



INGREDIENTS

1 cup (2 sticks) butter
1 cup brown sugar
1 cup white sugar
2 eggs
2 tsp. pure vanilla extract
2 cups flour
2 tsp. baking powder
1/2 tsp. salt
2 cups raisins
2 cups old-fashioned oats
1 cup shredded sweetened coconut

DIRECTIONS

1. Preheat oven to 350 F. Lightly grease or line a large baking sheet.

2. Cream butter and sugar in a large bowl until light and fluffy. Beat in the eggs and vanilla. Add the flour, baking powder, and salt and mix until well incorporated. Stir in the oatmeal, raisins, and coconut. Drop by heaping spoonfuls onto the prepared baking sheet.

3. Bake in preheated oven for 8-10 minutes, until lightly golden around the edges. Remove from the pan to cool on a wire rack.

Makes 2-3 dozen cookies.

Oatmeal ,Coconut & Chocolate chip : 



  • 1 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup old fashioned oats
  • 1 cup shredded coconut
  • 1 cup semi-sweet chocolate chips
  • Preheat oven to 350 degrees F.
  • Whisk together flour, baking powder, baking soda, and salt into a bowl. Set aside.
  • Cream together sugars and butter with a mixer. Add egg and vanilla and beat until smooth, about 2 minutes. Slowly add in flour mixture. Stir in oats and coconut. Add in chocolate chips.
  • Roll the cookie dough into balls or use a cookie scoop, about 1 tablespoon of dough per cookie. Place on a large baking sheet that has been lined with parchment paper or a Silpat baking mat, about 2 inches apart.
  • Bake for 10 minutes or until tops are slightly golden. They will still be soft. Let sit on cookie sheet for 2 minutes and transfer to a wire cooling rack to cool completely.
