Raisin Oatmeal Cookies

 3 Ingredients Raisin  Oatmeal Cookies 





  • 1 1/4 cups (106 g) rolled oats
  • 8 oz (288 g) unsweetened applesauce
  • 1/4 cup (34 g) raisins roughly chopped
  • Preheat oven to 350°F (177°C). Line a large baking sheet with parchment paper .
  • Mix all ingredients together making sure the raisins are mixed through the batter. (the batter will be a little loose) 
  • Scope out and place on prepared baking sheets. And press down with the bottom of a glass. Bake for about 15 minutes or until done. 

Sunday Lunch : Chicken Spagetti

 

1/2 cup diced bell pepper
1/4 cup butter
1 medium onion, diced
1 cup broth (from boiled chicken)
1 can (10.75 ounce size) cream of chicken soup
1 can (10.75 ounce size) cream of mushroom soup
3 cups diced cooked chicken
1 can (10 ounce size) Rotel tomatoes
1 package (7 ounce size) spaghetti pasta (cooked in chicken broth)
1/2 pound Velveeta cheese (cut into pieces)
salt and pepper, to taste

Saute bell pepper and onion in butter. Add cup of broth. Simmer until tender. Remove from heat. Add soups and Rotel tomatoes. Stir well. Mix chicken, cooked spaghetti, salt and pepper, cheese, and soup mixture. Bake in large baking dish at 375 degrees F for 30 minutes.

Crock Pot directions: Spray slow cooker with non-stick cooking spray.

Combine all ingredients in slow cooker and stir to mix well. Cook on low for 2-3 hours. Stir again just before serving.Share

Parmesan Egg-in-a-Hole

 It's Saturday Morning Breakfast ! 




Ingredients

  • 1/3 c. mayonnaise
  • 1/4 c. grated Parmesan cheese
  • 6 slices Texas toast-style bread
  • 6 large eggs
  • kosher salt and freshly ground pepper
  • hot sauce, optional
  • Stir together mayonnaise and cheese in a bowl. Spread on both sides of each bread slice, dividing evenly. Cut a 3-inch circle from the center of each bread slice.
  • Step 2Heat a large nonstick skillet over medium heat. Working in batches, cook bread until golden brown on one side, 1 to 2 minutes. Turn and immediately crack an egg into the hole of each slice; season with salt and pepper. Reduce heat to medium-low and partially cover pan. Cook until eggs are set, about 3 to 4 minutes. Repeat with remaining bread and eggs. Cook bread rounds until golden, about 1 to 2 minutes per side.

Easy Zucchini Casserole

 



  • large zucchini
  • 2 pounds ground beef
  • 24 ounces pasta sauce
  • 15 oz ricotta cheese
  • cup shredded parmesan regianno
  • 1 1/2 cups mozzarella
  • 1 egg
  • salt and pepper
Slice the zucchini lengthwise into thin slices, as thin or thick as you'd like. Set aside. Add the ground beef to a large pan over medium high heat. Finely break down the ground beef with a spatula and pan fry it until browned. .  Pour the pasta sauce on top of the ground beef (remember to reserve 1/2 cup) and stir together, then remove from heat. In a medium bowl, make the ricotta mix by stirring together the ricotta cheese, parmesan, egg, salt and pepper.  Spread 1/2 cup of pasta sauce onto the bottom of your 9x13-inch casserole dish.  Add your zucchini slices on top of the pasta sauce. They can overlap or you can place them side-by-side.  
  • Top the zucchini with 1/2 of the bolognese sauce, and evenly spread 1/2 the ricotta mix on top of that.
  • Add 1/2 cup of grated mozzarella on top of the ricotta, along with a sprinkle of chopped parsley and basil.
  • Repeat these layers one more time.

CRUST AND CRUMBLE TOPPING

  • 1/2 cup unsalted butter, melted
  • 1/2 cup granulated sugar
  • 1/4 cup light brown sugar, packed
  • 1 1/2 cups all-purpose flour
  • pinch salt, optional and to taste
  • FILLING

    • 1 large egg
    • heaping 1/2 cup plain or vanilla Greek yogurt; or sour cream (lite is okay)
    • 1/3 cup granulated sugar
    • 2 teaspoons vanilla extract
    • 1 tablespoon all-purpose flour
  • BLUEBERRY LAYER

    • 12 ounces (2 cups) blueberries (fresh or frozen; I used frozen and didn’t thaw)
    • 1/3 cup granulated sugar (or 1/2 cup if berries are sour)
    • 2 tablespoons lemon juice
    • 2 teaspoons cornstarch
  • MAKE THE BLUEBERRY LAYER

    1. In a separate medium mixing bowl, add all filling ingredients and toss to combine. If sugar hasn’t dissolved fully or still has crystals, that’s okay because it liquifies while baking.
    2. Evenly distribute blueberry mixture over the filling.
    3. Evenly sprinkle with the reserved heaping 3/4 cup crust mixture. Before sprinkling,
    4. BAKE THE BARS

      1. Bake for about 60 minutes, or until edges are bubbling quite vigorously and there’s some bubbling in the center. Crumble topping should appear set and very pale golden.*
      2. Place pan on a wire rack and allow bars to cool for at least 1 to 2 hours (overnight is even better) before slicing and serving. If you try to slice bars before they’ve cooled completely, they’ll be extremely messy and could fall apart. Bars will keep airtight at room temperature for up to 1 week, in the fridge for up to 10 days (they’re good slightly chilled if you like chilled pie), or in the freezer for up to 6 months.

1. What subjects do you find you enjoy most in conversations?

We talk about family, books and crafts and trips taken. 

2. What topics do you try to avoid with   with friends or with family or even with strangers?

My Mom always said : Religion and Politics and I follow Moms advice. 

3. What topics are difficult for you to talk about? Would you like that to change? 

Health and Mental issues. Some what  Knowledge is power.

4. What topics really can get you going for good or for bad?

Helping others and  local community events. 

As always your ideas for topics are more than welcome.

Pigs in Blanket

 It's Tuesday Kids Treat time : and this is an oldie but a goodie. 






  • 1 (8-ounce) can refrigerated crescent rolls
  • 8 hot dogs
  • 1 egg lightly beaten
  • 1 tablespoon water
  • sesame seeds for topping
  • Preheat the oven to 375°F. Lightly grease a baking sheet and set aside.
  • Separate crescent dough into triangles.
  • Place a hot dog at the wide end of each triangle and roll up. Place on a prepared baking sheet.
  • In a small bowl, combine egg and water. Brush egg wash over the tops of the rolls. Sprinkle with sesame seeds and press Gentilly
  • Bake for 12–15 minutes, or until golden brown

Oatmeal and Berries

 

Saturday Breakfast : Oatmeal and Berries 



  • ¼ cup quick oats
  • ½ cup low-fat milk
  • ½ cup frozen berries
  • 2 teaspoons brown sugar (optional)
  • 1 Tablespoon finely chopped nuts* (optional)

Directions:

  1. Wash hands with soap and water. Place oats, milk, berries and brown sugar in a microwave-safe bowl.
  2. Microwave 1 ½ to 2 minutes until hot, stirring at least once. Watch mixture carefully so that it does not cook over the container.
  3. Top with nuts and enjoy

Rea Xake recipe

 Tea Cakes  for National Tea Day 






  • 1 stick unsalted butter room temperature
  • 3/4 cup granulated sugar
  • 1 large egg at room temperature
  • 2 teaspoons pure vanilla extract
  • 1 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking soda
  • In a medium sized bowl, whisk together the flour, salt and baking soda and set aside.. 
  • In the bowl of your mixer, add butter and sugar and mix together on high speed until fluffy and smooth (about 4-5 minutes).
  • Turn mixer to medium speed and add in one egg and vanilla extract and beat until well incorporated.
  • Lastly, turn mixer to slow speed and add in flour mixture in intervals of three beating after each addition to incorporate.
  • After dough is well mixed, turn off mixer and remove dough from mixer and add to a ziploc bag and place in your refrigerator for at least one hourOnce dough is firm, remove from fridge and preheat your oven to 325 degrees.Line your cookie sheet with parchment paper.Taking a measuring tablespoon, scoop out cookie dough the size of the tablespoon and roll into a ball. Using your thumb, gently press the center to flatten a bit and place on the tray.Do the same for the rest of the dough leaving at least an 1 1/2 inches between each dough ball.Bake for 9-11 minutes until golden brown on the edges and remove from the oven.Cool for 5-10 minutes and serve.
