Healthy Bluebeery bites

 




  • 2 cups old-fashioned oats
  • 2 cups unsweetened shredded coconut
  • 3/4 cup dry-roasted & salted almond butter 
  • 1/2 cup honey
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon fine sea salt 
  • 1/2 teaspoon ground cinnamon, 
  • 1/3 cup dark chocolate chips
  • 1/3 cup dried sweetened blueberrie

  • OATS AND COCONUT: Add the oats and coconut to a large (12-cup) food processor fitted with the blade. Pulse for 30 seconds to a minute or until fairly ground up.
  • ADD REMAINING INGREDIENTS: Add in the almond butter, honey, vanilla, salt, and cinnamon, and dark chocolate chips. Pulse mixture again until ingredients are finely chopped and well incorporated. Finally, add in the blueberries and pulse until blueberries are incorporated in the mixture. If the mixture is too dry and crumbly, add a touch more almond butter and/or honey. If it is too wet, add a bit more oats and re-pulse.
  • ROLL: Use a 1-tablespoon measuring spoon or 1-1/2 tablespoon cookie scoop to portion out the balls and then tightly roll into balls. Once rolled, place in the fridge to firm up and then transfer to an airtight container. Store in the fridge for 1-2 weeks or freeze

Beddy Bye

 Hello! Nice to see you back for another Tuesday 4 which was begun by Toni Taddeo and kept up in her memory.    It might be nice to talk about our homes and how we like our rooms to be ordered and used.  What about the bedroom.. a place of comfort and peace.


1. How do you make up your bedroom and bed... colors? blankets? Quilts? Bedspread? Comforter? Throws? Pillow? what goes into making your bed comfy for you?   

Its a King bed lots of plillows, throws and blanket. All nutreals and lots of whites. 

2. What is in your dresser? Is it organized or messy?

Messy. Two vases that where my Moms. 

3. What's in and on your night stand?

Bottle of water, Bible, and basket of things,  

4. Do you read in bed or watch TV before going to sleep?  

Not usually. But sometimes I do read in bed.

Triple Berry Trifle : Memorial day

   

 Memorial Day : Triple Berry Trifle 


  • 1 (13 to 16 oz) store-bought angel food cake
  • 3 Tbsp fresh lemon juice
  • 1 1/2 tsp lemon zest
  • 3 Tbsp honey
  • 1 3/4 cups heavy cream, well chilled
  • 12 oz. cream cheese, slightly softened
  • 1 1/4 cups (160g) powdered sugar
  • 1 1/2 tsp vanilla extract
  • 16 oz. fresh strawberries, hulled and sliced
  • 18 oz. fresh blueberries
  • 6 oz fresh raspberries, optional
  • Mint leaves, optiona

Slice angel food cake into 3/4-inch thick slices. In a small mixing bowl whisk together lemon juice, lemon zest and honey until well blended. Brush mixture over each both sides of the angel food cake slices. Cut angel food cake slices into 3/4-inch cubes. Set aside. In a large mixing bowl using an electric hand mixer whip the heavy cream on medium speed until slightly thickened then increase speed to high and whip until very stiff peaks form. In a separate large mixing bowl using electric hand mixer (no need to clean beater blades) whip cream cheese, powdered sugar and vanilla extract on low speed until blended. Increase speed to high and whip until light and fluffy, about 2 to 3 minutes. Add whipped cream to the cream cheese mixture and fold with a spatula until mixtures are evenly combined.

To assemble the trifle, layer 1/2 of the angel food cake pieces into an even layer at the bottom of a 13 to 14 cup trifle dish. Set aside 3/4 cup blueberries, then sprinkle 1/2 of the remaining blueberries over the angel food layer. Top with 1/2 of the whipped cream mixture and spread into an even layer. Top with a layer of 1/2 of the strawberries. Repeat this layering process once more with the angel food cake, blueberries, whipped cream mixture and strawberries. Finish with remaining blueberries and raspberries on top in the center if using, and decorate with mint leaves just before serving if using. This trifle will be best the day it is prepared though it will keep in the fridge for up to 24 hours.

Crockpot Meatloaf and Vegetables

 Sunday's Crockpot : on the menu Meatloaf and veggies ... 





  • 2 lb extra lean ground beef
  • 1/4 cup bread crumbs
  • 2 eggs
  • 1/4 cup diced onion
  • 2 tsp garlic powder
  • 1 TB dried parsly
  • 1 tsp salt
  • 1/2 tsp pepper
  • 3 TB A1 sauce
  • 1/4 cup ketchup
  • 1/3 cup BBQ
  • Sauce Topping:

    • 1/3 cup ketchup
    • 2 TB Brown sugar
    • 2 teaspoon Worcestershire sauce

    Veggies:

    • 2 cups baby carrots
    • 3-4 cups small red potatoes
    • 2 TB olive oil
    • 1 TB minced garlic
    • salt and pepper to taste
    • 1. Prepare your crockpot with cooking spray. In a large bowl, mix together beef, bread crumbs, eggs, onion, garlic powder, parsley, salt, pepper, A1, ketchup and BBQ sauce. It is best to mix by hand to combine all ingredients.
    • Form a loaf and place into the center of the slow cooker. Make sure the meat is not touching the edges.
    • In a small bowl mix together topping ingredients. Brush on top of meatloaf so it it evenly coated.
    • In a large bowl, combine carrots, potatoes, olive oil, garlic, salt and pepper. Toss until ingredients are well combined.
    • Place veggies around the outer edges of your meat loaf.Cover and cook on LOW for 7-8 hours.
    On Sunday I get up early and fill my crockpot. And then get ready to attend Church. When we are ready to eat  late lunch  food is all ready,,,,, Lisa

Mom's Banana Pancakes

 At Home : Mom's Banana Pancakes 

These are a family tradition served for breakfast or Dinner. 




  • 1 C   AP flour 

  • 1 tablespoon white sugar

  • 2 teaspoons baking powder

  • ¼ teaspoon salt

  • 1 egg, beaten

    • 1 cup milk

    • 2 tablespoons vegetable oil

    • 2 ripe bananas, mashed

    • Combine flour, white sugar, baking powder, and salt in a bowl. Mix together egg, milk, vegetable oil, and bananas in a second bowl. Stir flour mixture into banana mixture; batter will be slightly lumpy. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Cook until pancakes are golden brown, 3 to 5 minutes per side. Serve hot

Cat Treats

 At Home today its all about Pets





  • 10 ounces canned salmon undrained, broken up 
  • 1 egg beaten
  • 2 cups whole wheat flour

  • Pre Heat oven 350 degrees 
  • In a stand mixer, combine salmon, 1 egg (beaten), and 2 cups whole wheat flour until dough forms. If the dough is too dry, add up to 1/3 cup water. 
  • Roll dough on a floured surface until about 1/4-inch thick. Use a 3/4-inch cookie cutter in the shape of your choice to create your treats.
  • Place treats on a parchment-lined baking sheet and bake at 350° for about 20 minutes. When they’re slightly browned and crunchy, they’re done

Kids Fruit Kabobs

 Kids Treats this Tuesday

 is perfect for an afternoon snack or a swim party. 



  • wooden kabob skewers
  • strawberries (de-stemmed and cut in half if they are large)
  • raspberries (choose these or strawberries)
  • mandarin orange slices
  • pineapple (cut into bite sized pieces)
  • green grapes
  • blueberries
  • purple/red grapes

  • Insert one or two mandarin orange slices onto each skewer.
  • Add one pineapple piece to each skewer.
  • Add one green grape to each skewer.
  • Add two blueberries per skewer.
  • Insert one purple grape onto each skewer. Serve with favorite dipping sauce.

Crock Pot BBQ Boneless Chicken Thighs

 Sunday at Home : 

I put this in the crockpot before going to church. And will be ready for Lunch when we come home. 




  • 6-8 boneless, skinless chicken thighs
  • 1/4 tsp salt
  • 1/4 tsp ground black pepper
  • 1/4 tsp garlic powder
  • 1/4 tsp paprika
  • 1/2 Tbsp butter FOR EACH THIGH
  • 1 3/4 C BBQ sauce
  • 1 tsp Worcestershire sauce
  • 2 Tbsp dijon mustard
In a small bowl, combine salt, pepper, garlic powder and paprika. Rub on each chicken thigh. Place thighs in bottom of crock pot. Put 1/2 Tbsp pat of butter on each thig.  
  • In a small bowl or measuring cup, mix BBQ sauce, mustard and Worcestershire sauce. Pour sauce over thighs.
  • Cook on high 3-4 hour

DEVIL'S FOOD SHEET CAKE

 DEVIL'S FOOD SHEET CAKE



  • 1 1.2 C water
  • 2 C sugar
  • 3/4 C butter
  • 2 eggs
  • 1 teaspoon vanilla
  • 2 C AP flour
  • 1/2 C baking coca 
  • 2 teaspoon baking soda
  • 1/2 teaspoon salt 
  • Frosting of your choice
  1. In a large saucepan, bring water to a boil. Remove from the heat. Stir in sugar and butter until butter is melted. Add eggs and vanilla; mix well. Combine flour, cocoa, baking soda and salt; add to butter mixture and mix thoroughly.
  2. Pour into a greased 15x10x1-in. baking pan. Bake at 350° for 30-35 minutes or until a toothpick inserted in the center comes out clean. Cool completely on a wire rack.

No Surprise It's The Hodgepodge

 

 1. What surprises you the most about people? Nothing these days. But mainly How rude people are too each other. 

2. Would you rather have a chauffeur, nanny, gardener, maid, personal shopper or cook? Tell us why that one? 
personal shopper -I hate to shop. 

3. May 18th is National Notebook Day. No idea what that means but let's run with it anyway. What's something you currently keep in a notebook? Have you seen the movie The Notebook? On a scale of 1-5 how does it rate? (5=a favorite, can watch and re-watch and re-watch again) 
I have not seen the movie. I do keep a Notebook. And like to make personal notebook for gifts.

4. Do you like mushrooms? Last dish you made or ate that had mushrooms on the ingredient list? Your favorite dish that calls for mushrooms? 

We love mushrooms and use them in recipes all the time. Mushroom burgers, Mushroom and onions saute for burgers and steak. Stuffed Mushroom. 

5. What would you say is the most annoying thing people do in public? 
drop trash and liter.
