Southern Watermelon Rind preserves

 


  • ingredients
  • 6 cups watermelon rind, diced
  • 4 1/2 cups sugar
  • 1 lemon, sliced thinly, then seeded
  • 1 teaspoon allspice

Peel green skin off the watermelon, but leave a little of the red pulp on rind. Cut into 1-inch slices, then slice into 1-inch cubes. Place rind in a large pot and cover with the sugar until the fruit doesn’t show. Cover with plastic wrap; refrigerate overnight.

Place pot on stove and add lemon slices and allspice, if desired. Boil whole mixture until rind is clear, about 2 hours.

Pack into clean, hot jars. Wipe rims and screw on lids. Process 10 minutes in boiling water deep enough to cover lids by at least 1 inch. Serve the preserves on buttered toast, if desired.

NOTE: After cutting watermelon, save the rind in the refrigerator until you are ready to prepare the preserves

Easy Eggplant Parmesan

 

  • 1 large eggplant sliced
  • 2 eggs , beaten
  • breadcrumbs
  • mozzarella
  • pasta sauce 




    • Arrange a layer of eggplant slices in a colander. Sprinkle generously with salt. Continue layering and salting all eggplant slices. Let stand 30 minutes. Rinse and pat dry. Dip each eggplant slice in beaten egg, and dredge with breadcrumbs.
    • Heat oil in a heavy skillet. Over medium high heat fry eggplant in hot oil about 2 minutes per side until golden. Drain on absorbent paper.
    • Preheat oven to temperature 350°F Arrange half the eggplant slices in the bottom of baking dish sprayed lightly with nonstick spray. Spread half the sauce over top. Sprinkle with half the mozzarella and half the Parmesan. Repeat layers.
    • Bake 20-25 minutes or until mixture is bubbly.

HAPPY Monday.  And Welcome to my blog. It's been another hot week in South Louisiana.  But we had Rain Saturday but didn't cool off much. Yesterday we attended our Women Club Grandparents tea. Everyone had a wonderful time.

2. July 18th is National Sour Candy Day. Who knew? Do you like sour candies or other foods with 'sour' flavors? Kimchi, rhubarb, gooseberries, tamarind, dill pickles, sour cherries, sauerkraut, cranberries, and  grapefruit...of the sour foods listed which is your favorite? 

I love sour candy. Lemon and sour Apple. I enjoy sour cherries and cranberries in cakes, bread and more. 

3. Share a favorite memory of an aunt or uncle. 

This is in a Thanksgiving album i scraped for my Mom. One of the few pictures I have.  

4. How would you describe your ability to manage stress? 

Stress ... depends on what it is. Usually pretty good until the major crisis is over. Then I crash. 

5. What do you think about when you let your mind wander? 

Oh my !  Life, love , and then weird stuff - Who washes the dishes on food shows. what will the future bring, will my Camellia bloom. Next blog post....

Not Really. 

2.  What books influenced you as a young person.?

I read my Mom Nancy Drew books that i still have. 

3.  Do you continue educating yourself by reading books or listening to podcasts or lectures?

I have attend a few classes/ lecture about craft making, Cooking, and natural health. I love reading others blogs and You tube videos. 

4.  Have you ever sat in a coffee shop/restaurant/cafe  reading a book?  What is your preferred place to read?

No coffe shop here but I use the Library.. Magazines, Newspaper and of course books.

Easy Texas Caviar Recipe 






  • 1/2 cup olive oil
  • 3 tablespoons honey
  • 1/4 cup apple cider vinegar
  • 1 1/2 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon Salt
  • 1/2 teaspoon ground pepper
  • 1 pound Roma tomatoes seeded
  • and diced
  • 1 15 ounce can black-eyed peas drained and rinsed
  • 1 15 ounce can black beans drained and rinsed
  • 1 1/2 cups sweet cornfrozen and thawed
  • 1 red oniondiced
  • 1/2 cup diced red bell pepper
  • 1/2 cup diced yellow bell pepper
  • 1 jalapenoseeded and diced
  • 1 cup chopped cilantro or parsley
  • In a small bowl, whisk together the olive oil, honey, cider vinegar, chili powder, garlic powder, salt and pepper. Set aside.
  • In a large bowl, combine the tomatoes, black-eyed peas, black beans, corn, onion, bell peppers, jalapeño and cilantro.
  • Pour the dressing over the salad and toss to combine.
  • Cover and chill for one hour. Serve with Chips or Crackers... 

This is a must for any Summer party in the South !

Cherry Cobbler with Cake Mix






  • 2 (21-ounce) cans cherry pie filling

  • 1 box white cake mix

  • 1/2 cup butter, melted and cooled to room temperature

  • Ice cream, 

  • Preheat the oven to 375 degrees Fahrenheit. Grease a 9×9-inch glass baking dish with butter or baking spray.
  • Pour cherry pie filling into the dish and spread evenly.
  • Place the white cake mix in a large bowl. Gradually pour the melted and cooled butter and whisk until crumbly.
  • Sprinkle half of the cake crumble over the pie filling. Stir gently until slightly combined. Sprinkle the remaining cake crumble over the filling and pat it down with a 
  • rubber spatula.
  • Bake for 40 to 45 minutes or until the top is golden brown.
  • Serve with optional ice cream. Enjoy!

Blueberry Muffins with yogurt

 Blueberry Muffins with yogurt 




  • 1 + ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup unsalted buttersoftened at room temperature
  • ¼ cup brown sugarpacked
  • 1 large eggat room temperature
  • ¾ cup plain yogurt
  • 1 teaspoon vanilla extract
  • 1 + ½ cup blueberriesfresh or frozen
  • Preheat oven 400 degrees and line muffin tins. 
  1. In a medium bowl, sift together flour, baking powder, baking soda and salt.
  2. Use a stand mixer or a hand mixer to cream together the butter and sugar in a large bowl, until light and fluffy, about 2 minutes. Beat in egg, then add yogurt and vanilla and beat until combined. The batter will be lumpy.
  3. Add dry ingredients to wet ingredients and beat until just combined, and no dry flour particles are visible. Fold in the blueberries (reserve ¼ cup of them for the top of the muffins.
  4. Use a medium to large cookie scoop and divide batter evenly into the lines, filling them all the way to the top. Press remaining blueberries on top.
  5. Bake for 18-20 minutes, until the tops are golden brown and a toothpick inserted comes out clean. Allow muffins to cool in the pan for 5 minutes, then transfer them to a wire rack to continue cooling
